Sweet roasted yams combine with a citrusy cilantro cacao nib sauce in a quick, delicious side dish that’s perfect for vegan, gluten-free, and paleo guests – but that all your guests will devour.
12 ounces (2 small) yams, slice into ¼” rounds
1 tablespoon vegetable oil
Salt and pepper, to taste
1 garlic clove, finely chopped
1/3 cup finely chopped cilantro
1 tablespoons Taza Roasted Cacao Nibs, coarsely chopped
3 tablespoon lemon juice
4 tablespoons olive oil
1. Adjust oven rack to middle position and preheat to 375 degrees. Toss yams with vegetable oil and season to taste with salt and pepper. Place on a baking sheet and roast until soft and browned, about 25 minutes.
2. In a bowl whisk together garlic, cilantro, cacao nibs, lemon juice and olive oil. Season to taste with salt and pepper. Serve yams with cilantro sauce drizzled on top with additional sauce to pass.
