When you’re in search of a cocktail snack or appetizer that feels more special and festive than the standard veggies and hummus, brie en croute is perfect. Try this elegant yet easy creation: rich brie melting inside golden brown puff pastry, with a tangy-sweet chutney for contrast.
Serves 6 as a casual cocktail snack
1 pound puff pastry, thawed if frozen
One 7-ounce round of brie, top rind removed
2 tablespoons Taza Cranberry and Cacao Nib Chutney
1 tablespoon sliced almonds, toasted
1 egg, beaten
1. Adjust oven rack to middle position and preheat to 350 degrees. Roll out pastry and place brie in the center. Top the brie with chutney, then almonds. Gather ends of pastry up and pinch to close over the chutney and almonds. (Make ahead tip: At this point you can wrap the brie in foil and freeze for up to 2 months. When ready to use, brush the frozen brie with egg and continue with step 2.)
2. Place on a baking sheet and brush with beaten egg, then bake until puffed and golden, about 30 minutes if fresh, or 45 minutes if cooking from frozen.
