Chocolate Paletas

Summer is frozen treat season. Try this vegan paleta, a Latin American ice pop. The name paleta comes from palo or “stick.” This popsicle has only three ingredients, including creamy coconut milk to add dairy-free richness. 

Makes 6 (depending on size of mold)

Ingredients:

1 13.5-oz can coconut milk
1 package (2 discs) Vanilla Chocolate Mexicano or (2 discs) Cinnamon Chocolate Mexicano
1/4 cup brown sugar

To Prepare: 

1. In a small sauce pan heat coconut milk on medium-low heat.
2. Add chocolate and sugar, whisking constantly until chocolate is melted and sugar is dissolved. 3. Allow mixture to cool then divide between popsicle molds.
4. Freeze overnight and enjoy!
