Chocolate Chia Pudding

Chocolate’s certainly an indulgence but that doesn’t mean it has to be unhealthy! Start 2016 with this easy overnight chia seed pudding! It’s a great way to get your protein, fiber and antioxidants in with a decadent and bold flavor you love.

Chocolate Chia Pudding

Makes 2 servings

Ingredients:

2 cups coconut milk or any non-dairy milk
1-2.7oz package Super Dark Chocolate Mexicano Disc, broken into pieces
3 tbsp sugar
5 tbsp chia seeds

To Prepare

In a small saucepan over medium-low heat, bring your coconut milk to a simmer. Once milk is hot, remove from heat and add in chocolate and sugar. Whisk to combine until sugar is fully dissolved. Set aside to cool to room temperature.

Once chocolate mixture is cool, transfer it to a large sealable container and add chia seeds. Mix well until all the seeds are covered with chocolate mixture. Pro-tip: if the texture of whole chia seeds isn’t your thing, throw the entire mixture into a blender and blend until smooth. Cover with a tight lid or plastic wrap and chill overnight or for at least 8 hours. Serve chilled with toppings of your choosing.

Pudding can be kept in an airtight container for up to 10 hours so enjoy quickly!
