Goat Cheese Bonbons

At first glance this might seem like a strange pairing of ingredients, but if you think a little deeper, the rich flavor of roasted cocoa and the tart tang of goat cheese make an ideal combination. These super fast bonbons are the perfect little treat for the end of a dinner party or a potluck. Think of it as the after-dinner cheese course and the dessert, all wrapped into one delicious bite. 

Ingredients:

1 bar Taza 60% Dark Stone Ground Chocolate, chopped
1 cup (8 ounces) fresh goat cheese
1 tablespoon confectioners sugar
Finely chopped Roasted Cacao Nibs, to garnish

To Prepare:

1. In a double boiler melt the chopped chocolate. In a separate bowl, mix together goat cheese and confectioners sugar. Pour melted chocolate over cheese mixture and stir until fully incorporated. Chill in the fridge until firm, at least one hour but ideally overnight.

2. Once mixture is fully chilled and stiff, use a teaspoon to roll into bite-sized balls, then coat in chopped Roasted Cacao Nibs if desired. Let sit in the fridge until ready to serve.
