Chocolate Dipped Shortbread Cookies

CHOCOLATE DIPPED SHORTBREAD COOKIES🍫🍪 (vegan/gf/df) are simply the best way to kickoff the weekend!💃🏼 These paired with some coffee is my fav combo🫶🏻 I used one of my favorite vegan chocolates @tazachocolate 70% dark chocolate coconut and it is dreamy!🤤 The coconut chocolate combo with the almond-y shortbread cookies is such a yummy match

Chocolate Dipped Shortbread Cookies🍫🍪
vegan/gf/df


For the cookies:
-1 1/2 cup almond flour
-3 Tbsp melted vegan butter or coconut oil
-3 Tbsp maple syrup
-1/2 tsp almond extract
-pinch of salt


For the chocolate coating:
-1 1/2 70% dark Taza Coconut bar (my absolutely favorite!)
-1 tsp coconut oil
-optional toasted coconut for topping


Directions: Preheat oven to 325°F and line a baking sheet with parchment paper. In a bowl, mix all of your cookie ingredients until you have a dough.

Roll into about 12-14 cookies and lightly flatten with a fork or your hands.

Bake for 10 min. Let cool.

While the cookies are cooling, melt together your chocolate and coconut oil until smooth.

Dip each cookie in the chocolate and top with optional toasted coconut.

Let harden and enjoy!
