What makes chocolate keto friendly?

Keto eating keeps net carbs low, and net carbs are what count: total carbs minus fiber. In chocolate, the carbs that remain after fiber are almost entirely sugar. Most "keto chocolate bars" get their numbers down with sugar alcohols and artificial sweeteners. High-percentage dark chocolate gets there by recipe. At 95% cacao there's barely any room left for sugar, and cacao itself is naturally high in fiber, so a serving's net carbs land well below its total carbs. Check the nutrition panel on each product page for exact counts.

Net carbs, not total carbs

If you only look at the total carbohydrate line, dark chocolate can look worse than it is. Cacao is one of the more fiber-dense foods you can eat, and that fiber is subtracted when you calculate net carbs. A serving of our darkest chocolate typically has more grams of fiber than grams of sugar, which is why a square or two fits into a strict daily carb budget. Many keto products advertise "net carbs" for exactly this reason; the difference here is that the fiber comes from the cacao bean, not from added inulin or chicory root.

No sweetener substitutes, just cacao

Every product in this collection is made from organic cacao beans, organic cane sugar (very little of it), and organic cocoa butter. If you've been burned by the strange aftertaste or digestive issues of sugar-alcohol chocolate, this is the other path: less sweetness, more actual chocolate flavor, with the bright, fruity notes and gritty texture that stone grinding preserves.

Less Sugar, Still Chocolate

We don't do wellness theater. The reason these are healthier chocolate snacks is arithmetic: high-percentage dark chocolate simply contains less sugar, and nuts and nibs bring protein and fiber. The 87% line has 3 grams of sugar per serving; the 100% chunks have zero. What you taste is cacao, not a sweetener substitute.

 Is dark chocolate keto?

It can be, if the percentage is high enough. Milk chocolate and most 50–70% dark bars carry too much sugar for strict keto, and their fiber doesn't offset enough of it. From about 85% cacao up, the sugar drops and the fiber rises, so a square or two fits comfortably in most daily carb budgets on a net-carb basis. That's why this collection starts at 85% and runs to 100%. For the full high-cacao range, see 80% Cacao & Up.
